Foxtail Millet Soup

For 2 servings, Ingredients: 150 grams of chopped mixed vegetables – carrot, broccoli, French beans, spinach etc 1 tbspn olive oil ½ table spoon of crushed black pepper 1 tale spoon oregano 3-4 garlic pods chopped finely Water for cooking the millet and for adjusting the soup consistency. Salt as per taste Method: Wash and Rinse the millet well. Allow it to soak for 20 mins, cook it with half a cup of water in a saucepan covered until soft Pressure cook the veggies for a whistle In a wok heat oil and add garlic and sauté for few seconds. Add the boiled vegetables, salt and stir and mix well. Finally add the cooked millet along with its water add more water for a soupy consistency if needed. Cover it and allow to boil for 7-8 minutes Add pepper and oregano as per taste. Serve hot with any multigrain bread. Tip: 1 table spoon corn flour mixed with water can also be added to make the soup thicker.

Foxtail Millet Laddu

Ingredients: 1 cup foxtail Millet ½ cup roasted gram dhal flour ½ cup powdered brown sugar or powder jaggery 2 table spoon ghee 2 table spoon pure honey 2 table spoon grated coconut Method: Heat a pan. Dry roast the roasted gram flour for 2 minutes and keep aside. Wash the millet and dry roast it till golden brown. Allow it to cool and grind it to a fine powder. Sift the flour and keep aside. Heat a pan with ghee and roast the dry fruits of your choice along with the coconut. Now mix all the roasted items and the flour in a mixing bowl. Add the powdered brown sugar and honey and mix well, finally start making small balls, add little melted ghee if needed for getting the desired shape. You can decorate it with a piece of almond or cashew at the top. We can make dosas,upma,mutli grain bread and chapattis,khichdi and pulao also using this millet.
